The New York spot sells its signature loaf every single day. It is described as an 'Austrian rye sourdough'. The website claims it is crafted from just four ingredients, with time being one of them, using 100 percent organic rye flour. Their loaves ferment for up to 24 hours to reach peak aroma. That long wait allows the bread to fully develop benefits from its high fiber content. This process creates natural pre- and probiotics that support gut health and make digestion easier. The team loves the method, which is rooted in over 50 years of craftsmanship practiced at the Auer family's bakery in Graz, Austria. They insist their loaves have yet to meet a rival.
Dr Kimbell admits wholegrain rye can be a nourishing choice. She advises shoppers to pick loaves containing a wider range of plants instead. An everyday loaf offers an opportunity to bring more plant diversity into our diets. Why? Fiber provides food for gut microbes, which produce compounds involved in communication between the gut and brain. That understanding shows fiber and diversity are central to bread, gut health, and mental health. The bakery also sells half and quarter loaves at lower prices. The product launched a fortnight ago and sold more than 1,000 loaves in its first week. It is affordable to most people and it is organic.

While many tasters have raved about the bread on TikTok, others point out that Austrian rye bread is a very popular and cheap option in Europe. Another writer noted that as Austrians, finding it sold at such prices seems ridiculous.
