Daily Tomatoes May Shield Against Deadly Fatty Liver Disease

Aug 26, 2026 •Wellness

A daily dose of tomatoes might just be the shield you need against a deadly form of liver disease, new research suggests. In Britain alone, non-alcohol fatty liver disease plagues roughly one in three adults. This condition often stems from obesity or high cholesterol and type-2 diabetes. It can spiral fast into inflammation, scarring, and eventually total liver failure.

Scientists at the National Institute of Gastroenterology in Italy decided to test this idea on 79 patients with fatty liver disease and a BMI of 30 or less. They split these participants into two distinct groups. One side ate 200 grams of raw tomatoes, that is one large fruit, plus 50 grams of tomato sauce every single day for six weeks. The other group stuck to a diet completely free of tomatoes.

The results came back after the six-week period using specialized scans designed to measure liver fat. The data, published in the journal Nutrients and backed by the Italian Ministry of Health, showed that both groups saw some drop in liver fat. But those consuming the daily tomato intake fared significantly better. Their liver fat measurements fell by about 11 percent from the starting point. The control group only managed a reduction of roughly 6 percent.

However, there is a catch. Eating tomatoes did not make a statistically significant difference in liver stiffness, fibrosis scores, liver enzymes, cholesterol levels, blood sugar, or overall body composition. Researchers admit they do not know exactly why the tomato eaters lost more fat, though they point to anti-inflammatory nutrients found within the fruit as a likely contributor.

This study highlights how specific dietary choices can alter health outcomes even when broader metrics stay static. The findings push for immediate attention on simple food changes that could lower risk before damage becomes permanent.
